Putting veggies in the spotlight

It's all about the veggies

As a veggie fan, I am excited about a new cookbook on the market—Love & Lemons by Jeanine Donofrio and Jack Mathews.  It is a vegetarian cookbook, although many of the recipes could easily be adapted by adding meat to them.

Love & Lemons isn’t organized into breakfast, lunch and dinner but rather in an alphabetical format so that you can see what’s in your fridge and then figure out what to make with what you have on hand.

Donofrio explains in the introduction of her book why she has the book organized as it is—in categories under the name of each vegetable.  “It‘s organized by vegetable so that you can come home with something beautiful from the farmers market and then figure out what to make with it,” she said. “Or you can start with a vegetable or two that you have on hand and build from there.”

My favourite part of this book are a few pages near the back that give quick and easy ways to change up classic pesto, hummus, salsa, guacamole or smoothie recipes. Each of these pages has four visual variations of each of the above recipes.

Whether you use vegetables as a side or you are vegetarian looking for new ideas, you will find many unique ways to use almost any vegetable you can imagine in Love & Lemons.

You can follow Donofrio‘s blog www.loveandlemons.com and get a copy of Love & Lemons.
